1/2 cup hot mashed potatoes (approx 1 potatoe)
4 cups icing sugar
1/2 tsp peppermint or rum flavouring (to taste)
Melt 6 squares of semi-sweet chocolate. Add 3 to 4 tbsp margarine.
Add icing sugar to mashed potatoes. Mix to handling stage. Roll in balls (size of large grapes). Dip balls in chocolate and roll in dessicated coconut. Let sit for an hour.
