Shrimp Fried Rice

2 tbsp soy sauce

1/8 tsp ground ginger

1/8 tsp ground red pepper

1 tbsp vegetable oil

3/4 lbs medium shrimp

1 cup peas

1/3 cup sliced green onions

8 oz can water chestnuts

1 cup chilled long grain rice

2 tbsp sliced toasted almonds

1 tbsp chopped parsley

 

Combine first 3 ingredients.  Stir well and set aside.  Heat 2 tsp oil in a skillet over medium high heat.  Add shrimp and stir fry 30 seconds.  Add peas, onion, and water chestnuts, stir frying for another 2 minutes.  Add soy sauce mixture.  Remove from skillet and set aside.  Heat 1 tsp oil in skillet over medium high heat.  Add rice and stir fry 2 minutes.  Return shrimp mixture to skillet until thoroughly heated.  Sprinkle with almonds and parsley.
