Santa’s Raspberry Bars


  • 1 cup all purpose flour
  • 1 tsp. baking powder
  • 1/2 cup butter or margarine
  • 2 eggs
  • 1 tbsp milk
  • 1/2 cup raspberry jam
  • 4 tbsp melted butter or margarine
  • 2/3 cup sugar
  • 2 cups flaked coconut
  • 1 tsp vanilla


  1. Measure flour and baking powder into bowl
  2. Add butter and use a hand mixer to blend butter into flour until well mixed
  3. Stir in one egg and the milk
  4. Mix until a soft dough is formed
  5. Spread into an un-greased 8″ or 9″ square pan, pressing with fingers to cover the bottom with an even layer of dough.
  6. Spread raspberry jam over the dough evenly.
  7. Stir together the remaining egg, butter, sugar, coconut and vanilla. Spread on top of the jam.
  8. Bake at 350F for 30 minutes or until the top is lightly browned.
  9. Cool, then cut into squares
