Pumpkin Spice Cake

CAKE:

3 cups flour

3 1/2 tsp baking powder

2 tsp pumpkin pie spice

1 tsp baking soda

3/4 tsp ground nutmeg

1/2 tsp salt

1 1/2 cups sugar

3/4 cup butter, softened

3 eggs

1 1/2 cups pumpkin

1/2 cup evaporated milk

1/4 cup water

1 1/2 tsp vanilla extract

FROSTING:

11 oz cream cheese softened

1/3 cup butter, softened

3 1/2 cups powdered sugar, sifted

2 1/2 tsp maple flavouring

DIRECTIONS:

Preheat oven to 325F.  Grease and flour two 9″ round or square pans.  Combine flour, baking powder, spices, soda and salt in small bowl.  Beat sugar and butter in large mixing bowl until creamy.  Add eggs and beat 2 minutes.  Add pumpkin, evaporated milk, water and vanilla.  Gradually beat in flour mixture.  Pour into pans and bake for 35-40 minutes.  Cool on wire racks.  For the frosting beat cream cheese, butter, powdered sugar and maple flavouring in large mixer bowl until fluffy.  Once cakes are cool add frosting.  Garnish with nuts if desired.
