Gramma Macklem’s Bread Pudding with Caramel Sauce
Ingredients
Bread Pudding:
- 4 cups (1L) day-old French bread cubes
- 2 cups (500mL) pared, cored, chopped apples (optional)
- 1/2 cup (125mL) raisins
- 3 eggs
- 1 can sweetened condensed milk
- 1 3/4 cups (425mL) hot water
- 1/4 cup (50mL) butter, melted
- 1 tsp (5mL) maple extract (optional)
Caramel Rum Sauce:
- 2 cups brown sugar
- 2/3 cup butter cut in small cubes
- 4 tbsp. water
- 1 cup whipping cream
- 1/4 to 1/3 cup dark rum (depending on how strongly flavoured you like it!)
Directions
Bread Pudding:
Preheat oven to 350 degrees. Combine bread cubes, apples and raisins and place in greased 9″ square baking pan. Beat eggs and stir in the sweetened condensed milk, water, butter and maple extract. Pour over bread cube mixture, completely moistening the bread. Bake 45 to 50 minutes or until knife inserted in center comes out clean. Serve with caramel rum sauce
Caramel Rum Sauce:
Melt 1/4 cup (50mL) butter in medium saucepan, stir in 1 cup (250mL) packed brown sugar and 1/2 cup (125mL) whipping cream. Over medium heat, cook and stir until mixture comes to a boil. Boil 2 to 3 minutes. Remove from heat, stir in desired amount of rum. Cook slightly on medium heat for 1 to 2 minutes.
