Buddha Bowl


4 grilled chicken breasts

2 cups cooked brown rice

4 avocados sliced

1 14-ounce can chickpeas, rinsed and drained

10-12 cherry tomatoes, halved

yellow and orange bell pepper, chopped

small red cabbage sliced thinly

1 large head of broccoli, cooked until tender

2 cups fresh lettuce

handful of walnut halves

handful of pine nuts

1 lime sliced thinly

salt and ground pepper to taste

feta cheese on top!


Arrange chicken, brown rice, chickpeas, broccoli heads, tomatoes, avocado, peppers, cabbage, lettuce, walnuts and pine nuts in a wide bowl. Season with salt and freshly ground pepper to taste. Garnish with lime slices. Serve with your favourite salad dressing and/or hummus. Serves 4
